Lemon Christmas Cupcakes
After my dad make his lemoncello, there were a lot of left over lemons and i couldn't let them go to waste (they were fresh Meyer Lemons that Chris so thoughtfully picked and brought to us!), so i made these lemon cupcakes to serve after Christmas Dinner. I started with a simple Vanilla Cupcake Recipe. While they were cooling i made some Lemon Curd to fill the cupcake. You can make this in advance as it freezes very well. Then i make a simple syrup with my dads Lemoncello. Simple syrup is great for adding extra flavor and moisture to cakes and cupcakes. I then cut little cones out of the top of each cupcake and filled each with a teaspoon of lemon curd. I cut the bottoms off the cones and placed the little tops back onto the cupcakes. I used a toothpick to poke holes all over the filled cupcakes and brushed liberally with the lemoncello simple syrup. To top them off, I whipped up a simple cream cheese frosting and added a little fresh lemon juice and lemon zest. I made the snowflakes a few days earlier with some melted white chocolate. The snowflakes were easy to do (really!) and they look really pretty stuck on top! If anyone is interested, i can post a little tutorial with photos and you can give it a try for yourself! Enjoy!

GORGEOUS cupcakes. My mouth is watering. I love lemon.
