Double Chocolate Peppermint

I thought i'd share this new concoction for Double Chocolate Peppermint Cookies! I used the Double Chocolate Cookie recipe from a previous post and made them into Christmas cookies by adding Andes Peppermint Crunch Baking Chips to the batter. These little chips are great, they look just like candy canes but they bake up nicely without melting into a blob! After i scooped out my little balls of dough i dipped them into more Peppermint Chips and then baked them up. After they cooled, i melted a little semi-sweet chocolate and spread it in between two cookies and sandwiched them together! Voila! Chocolate Pepperminty Goodness! The boxes in the background are what i've been packaging up my Christmas Cookies into for gift giving. Happy Holidays!

hi stevie, thanks for the offer but i think Virginia gets a little too cold for me! Its been in the 40's at night here and i think i'm freezing! my friend Gigi lives in Massachussets and she says i dont know what "freezing" is!! ;-)

Yep - you definitely should get some of these out to the East Coast...
