Chocolate Carmel Covered Homemade Marshmallows
First let me preface this post by disclaiming that i do not like marshmallows. I think they taste like what i imagine a melted Barbie Doll mixed with some confectioners sugar would taste like - ew. However, I have several friends that really like marshmallow so i thought i'd give it a try, especially since i knew i wouldnt want to eat any! I found a recipe for Homemade Marshmallows and started cooking. I had trouble getting the right constistency the first try, so the second batch i cooked up to 250 on the candy thermometer and that turned out great. Be careful beating that hot sugar into the gelatin as sometimes it pops out of the bowl as its whisking. I covered most of my mixer with some Saran wrap so it wouldnt go everywhere! The next day i cut the marshmallows up into small squares and a few rectangles. I put sticks in the rectangles (like the chocolate covered marshmallows at Disneyland!). I froze all the marshmallows so they wouldnt melt from the hot caramel coating. When they were all frozen i lightly dampened the marshmallows with some water (helps the caramel adhere to the marshmallow) and then scooped caramel on the tops and the sides. Back into the freezer. Next i dunked them into melted chocolate and when they finished setting, drizzled a little white chocolate on top. The whole process was a little time consuming but if you like this kinda treat it would be worth it! Of course, you can always just make the marshmallows and enjoy them with hot cocoa!

I'm not fond of the idea of a chocolate dipped marshmallow, I really only like them for S'mores. Even when I see these in the store, I tend to pass them up.

AND BTW! You just inspired me for what I'm going to send out to people for a Christmas gift! It's not very expensive, and totally cute!
I'm going to make individually packaged hot cocoa mixes (I mix up my own, it's the richest EVER..uugghh, sometimes too rich for more than just a cup!), then cut out homemade marshmallows in special little shapes.
